A traditional recipe from the Netherlands producing delicious, fried, bite-sized snacks.
Ingredients
125g butter
1 cup flour
3 cups beef or chicken stock
3 tb chopped onion
1 tb fresh parsley, finely chopped
2 cups finely chopped cooked beef or chicken
Salt & pepper
Pinch nutmeg
Flour, egg & breadcrumbs for coating balls
Oil to fry such as vegetable, grapeseed.
Method
Melt the butter in a pan and add flour, stiring the whole time until you make a thick paste (the paste should have no colour).
Slowly add the stock stirring after each addition, simmer for a couple of minutes.
Stir in all of the other ingredients, season to taste.
Refrigerate overnight.
Take tablespoons of the mixture and make golf ball-sized balls.
Roll in flour, then whisked egg, then breadcrumbs.
Deep fry in oil at 190 degrees until golden brown. (just do 5 or so at a time)
Serve with mustard. It's lovely with bread and hot chips!
