Elevation - Grown at High Altitude in the Western highlands of Honduras

All of our coffee is high grown at elevations of 1,100 to 1,550 meters. Elevation is a crucial factor in coffee cultivation, impacting the flavor quality, and sustainability of coffee beans. Higher elevations result in slower bean development, allowing for more complex flavors to develop. High-elevation coffee tends to have nuanced flavors with floral, fruity, and acidic notes. Additionally, higher elevations contribute to higher acidity and brightness, desirable traits in specialty coffee. Slower maturation at higher elevations results in denser beans with greater sweetness, aroma, and richness. Also, pest and disease pressure are generally lower at higher elevations due to cooler temperatures.

Varietal - 100% Arabica

We grow 100% Arabica on our farm. Arabica coffee is a prized species of coffee plant known for its delicate flavors, complex aroma, and preference for high-altitude growing conditions. It is native to Ethiopia and now grown in various coffee-producing regions. Arabica coffee is characterized by its refined taste, which can include notes of sweetness, acidity, and floral undertones. It is often associated with specialty or gourmet coffees, requires careful farming practices, and has lower caffeine content compared to other coffee species.

Single Origin - Occidental Region, Honduras

Our premium Single Origin Coffee comes from the Western highlands of Honduras. This is a premier coffee producing region in central america. A key aspect of Single Origin coffee is traceability. Knowing where your coffee comes from, how it is grown, harvested, and processed, and the social and environmental practices associated with its production informs the quality of the coffee. Flavor Notes

When you taste Subida Coffee’s Dark Roast you will notice flavor notes of brown sugar and black cherry. Professional coffee tasters, known as cuppers, use their senses to identify and describe the various flavors present in the coffee. They look for specific attributes, such as sweetness, acidity, bitterness, and aroma, and use a standardized flavor wheel or tasting wheel as a reference guide. Flavor notes can be discerned based on the intensity, quality, and complexity of the flavors perceived in the coffee, and can be influenced by various factors, including the coffee's origin, processing methods, roast level, and brewing technique.

THE MOSES PROJECT

Coffee with a cause, Honduras coffee

The Moses Project, a 120-acre commercial farm and agriculture training center in a small community outside of Santa Rosa de Copán. At any given time, this facility houses an average of 40 boys above the age of 13. These young men learn best practices in the technical and economic aspects of agriculture, specifically in coffee, fish, and poultry. Most of these young men would not have continued their education due to lack of finances or facilities. Now, through the Moses Project, they are studying and are on their way to completing their high school education. Along with helping them complete their formal education, they take part in an agricultural education focused on tilapia, chickens, greenhouse vegetables, bee-keeping, and coffee. The goal is to equip them with all they need to lift themselves, their families, and their communities out of poverty. By purchasing Subida coffee you are a part of training and equipping the future generations of coffee farmers, business owners, and community leaders, who will shape and transform Honduras.

Smells great in the bag, but...
When it comes to my coffee, I LOVE a dark roast with a very bold and rich flavor. This coffee comes in a nice packaging and includes a cool metal clip to seal it back up between uses. When I first broke the seal, the aroma was great. The beans, themselves, looked nice and fresh. I used my hand grinder, set to produce a medium grind and after grinding noticed there didn't seem to be as much aroma. I added the fresh grounds to my drip coffee maker and started brewing. With my normal dark roast, I start smelling the coffee aroma shortly after the brewing begins. With this coffee, I never really smelled any aroma, even after the brewing was completed. The freshly brewed coffee in the carafe looked a little lighter in color than what I'm used to and also didn't really have much aroma. The flavor is very subtle (almost watered down). I found this a bit strange, considering I used almost twice the amount of grounds I normally use. I really didn't notice the "brown sugar" or "black cherry" notes that are listed on the packaging. This coffee does seem to have a bit of a "caffeine kick", though.While I do appreciate the concept and the cause(s) they support, I don't think I would buy this coffee again. To me, the coffee I normally drink is less than half the cost per ounce if this coffee, and has twice the flavor. I will most likely just mix the remainder if this coffee in with my regular coffee to try and take advantage of that extra caffeine kick.

The bag isn't resealable but it comes with a metal clip. I still transferred it into a different air and light proof container though.

I appreciate that this brand is single origin and supports education in Honduras. It's nice for a morning blend. It's not on my favorites list since I prefer stronger coffees, but it's worth a try.

This is definitely a dark roast. It is very bold. It is not acidic. It is a smooth coffee and it pairs well with all types of creamers. You can definitely taste the sweet notes of brown sugar. The notes of black cherry are very light,and complement this coffee very nicely. Definitely worth the price.

The minute I opened the bag it shipped in I was so excited to try due to its wonderful smell!! It was rich and fresh. First thing I want to mention is the cause. We love it, honestly. It’s fantastic… but people won’t continue to buy to support a cause if the product isn’t good and you do not need to worry about that with this coffee! It is rich, I won’t lie. I put creamer and milk and sugar in my coffee and it’s able to be the right strength for me but if you drink black and typically go for a lighter roast this could be a bit much. The bag comes with a clip to keep it closed and fresh which is great that they thought of that! Very happy with the taste and mission!

My husband and I grind beans fresh every morning for our coffee and we were really looking forward to trying the Subida Whole Bean Dark Roast Coffee. True to its name it is a dark, rich, flavorful coffee. I’m not sure I can isolate the cherry and brown sugar flavors, but it doesn’t matter to me…it is simply delicious. We buy only the best coffee, one of our splurges, and this Subida coffee is among the best we’ve tried. It came tightly sealed with an included clip to keep it fresh after opening. It is on the higher side in price, but 100% of the cost goes to the nonprofit, which has an extremely inspirational story and mission statement. Don’t hesitate to try this brand.

about a third of the beans weren't roasted at all and were green. the ones that were roasted aren't dark roasted. very disappointed with this coffee.
