Elevation is a crucial factor in coffee cultivation, impacting the flavor quality, and sustainability of coffee beans. Higher elevations result in slower bean development, allowing for more complex flavors to develop. High-elevation coffee tends to have nuanced flavors with floral, fruity, and acidic notes. Additionally, higher elevations contribute to higher acidity and brightness, desirable traits in specialty coffee. Slower maturation at higher elevations results in denser beans with greater sweetness, aroma, and richness. Also, pest and disease pressure are generally lower at higher elevations due to cooler temperatures. |

THE MOSES PROJECT
The Moses Project, a 120-acre commercial farm and agriculture training center in a small community outside of Santa Rosa de Copán. At any given time, this facility houses an average of 40 boys above the age of 13. These young men learn best practices in the technical and economic aspects of agriculture, specifically in coffee, fish, and poultry. Most of these young men would not have continued their education due to lack of finances or facilities. Now, through the Moses Project, they are studying and are on their way to completing their high school education. Along with helping them complete their formal education, they take part in an agricultural education focused on tilapia, chickens, greenhouse vegetables, bee-keeping, and coffee. The goal is to equip them with all they need to lift themselves, their families, and their communities out of poverty. By purchasing Subida coffee you are a part of training and equipping the future generations of coffee farmers, business owners, and community leaders, who will shape and transform Honduras.
Ensuring you have a fantastic cup of coffee is about attention to detail. Every step of the process is important and here at Subida Coffee we take that very seriously. Since we are the producers, we can ensure each coffee plant is cared for in order to maximize quality production. All our coffee is picked by hand, which allows for selective picking: ensuring only ripe coffee is selected. The coffee is then dried in our processing facility, and inspected by hand before being bagged. This coffee is very smooth. There's a touch of bitterness but not too much. The flavor is not bold. It's definitely mild but I wouldn't call it weak. My husband likes it black. But, I add some milk and stevia, and I found that I needed a bit less sweetener for this coffee.
The bag isn't resealable but it comes with a metal clip. I still transferred it into a different air and light proof container though.
I appreciate that this brand is single origin and supports education in Honduras. It's nice for a morning blend. It's not on my favorites list since I prefer stronger coffees, but it's worth a try.
